I’ve used a biscuit base to keep this recipe really easy but you can use a date-nut base which I will link below, for a more wholesome creation. The colour is vibrant and fresh and the juicy pop of blueberries is perfect. This lemon filling is divine, as it’s creamy, smooth and slightly tangy yet sweet. I have made this for a few a gatherings, family members and friends and it always goes down such a treat, so before Summer is over, I had to share it here with you. I have worked on this tart for a long time and it’s finally here. The lemon curd is simple to make and set over a biscuit base, the perfect no-bake dessert. Top blueberries with finely grated lemon rind.This Vegan Lemon and Blueberry Tart is smooth, creamy, tangy and very lemony bursting with fresh blueberries.(Rinse blueberries in water and then blot them to remove any large water drops. Top lemon curd with sugared blueberries.Spoon the lemon curd into the tart shell.Remove tart shell from the oven and allow it to cool completely.Return to the oven and bake for an additional 10 minutes. Remove the tart shell from the refrigerator and bake for 15 minutes.Let chill in the refrigerator for 30 minutes. Cover with a piece of parchment paper and fill with dried beans.Roll the rolling pin over the edge of the pan to neater the edges and trim off the excess dough.Carefully lift the dough into the pan and press to fit.Roll out to 3 inches larger than the tart pan. Turn dough out onto a floured surface.Add cold water if necessary, 1 Tbsp at a time, to make dough combine.Use a pastry knife to combine the ingredients until the mixture resembles bread crumbs. Continue stirring for 10 minutes, until the mixture thickens.Heat over medium heat, whisking constantly until the ingredients are well combined. Add the cubed butter and the lemon juice.Put the eggs in a sauce pan and whisk in the sugar.3 1/2 oz cold unsalted butter, cut into pieces.3 1/2 oz unsalted butter, cut into cubes.This would be a beautiful dessert to serve for any gathering! Then the curd is removed from the heat to cool while you make the crust. Eggs, sugar, butter, and lemon juice get headed on the stove until the butter melts and the mixture begins to thicken. This tart started with making a lemon curd. And gave us time to chat and watch a movie musical together at the same time. But they are also pretty simple to make, at least this one. I love making tarts because they are so pretty. I even picked up a few extra items to gift my sister for her kitchen. From the cutting board and measuring spoons to the knives and spatulas, I couldn’t wait to bake with my sister and these beautiful utensils.
